Christy and Matt Griffith met at North Carolina State University in 1999 and moved to Holly Springs 15 years ago. The Griffiths passed the old house on the corner of North Main and Earp Street every day and would dream about turning it into a fun and unique restaurant. When the one-time post office and residence finally came on the market in 2017, the intrepid entrepreneurs jumped at their chance. They spent the next three and a half years doing extensive renovations to get the 180-year-old house ready for the public. The Griffiths’ hard work paid off on December 11, 2020 when they opened the doors of Pimiento Tea Room.
Pimiento Tea Room, also known as PTR, is the Griffiths’ inspired take on a traditional English tea room mixed with their own maximalist, Southern-inspired style. The historic home-turned-restaurant boasts original pine beams and wooden floors, but now a bold green, brass-topped bar makes an eye-catching focal point. Colorful wallpaper and eclectic art set a playful tone around a mix of antique and modern furniture. Christy, who received training through Wake Tech’s Culinary Arts program and is PTR’s innovative chef, rotates menu items frequently, so be sure to check for her latest creations. Year-round must-haves include Brunswick Stew, Ten Layer Salad topped with Christy’s special pimiento cheese dressing, mouth-watering scones (with flavored butter options like honey-scallion, coconut-lime, vegan-vanilla, and cinnamon-brown sugar), and of course the Pimiento Cheese. Beer, wine, and spirits are available and PTR’s tea-infused signature cocktails are not to be missed—try The Widow Nichols (named after one of the house’s early occupants) made with bourbon, red rooibos tea, grapefruit juice, rose syrup, and grenadine. Pimiento Tea Room is open for lunch, supper, and Sunday brunch. Vegan, vegetarian, and gluten-free options are available.
Pimiento Tea Room is starting a campaign that gives customers the choice to round up their transactions to the nearest dollar and donate the change to benefit the life-saving research at CureSearch for Children's Cancer. The nonprofit organization is near and dear to the Griffiths’ hearts as it helped save their youngest daughter's life when she was diagnosed with cancer.
